These low-FODMAP Double Chocolate Chewy Fudge Cookies are completely flourless and taste similar to a rich low-FODMAP brownie.

Not only are they scrumptious, these low-FODMAP Double Chocolate Cookies are easy to make… you can do it all by hand, in under half an hour!

Low-FODMAP Double Chocolate Chewy Fudge Cookies; Gluten-free, Dairy-free

Although this recipe has not been tested, a single serving should be low-FODMAP based on the ingredients

Bake 350 F

Prep time: 10 minutes

Bake time: 10 minutes

Servings: About 24 cookies, depending on size

Ingredients

  • 2 & 1/2 cups confectioners/icing sugar
  • 1 cup unsweetened cocoa powder (1.5 tablespoons is one low-FODMAP serving, this is about 11 low-FODMAP servings)
  • 1/8 tsp kosher salt
  • 3 large egg whites
  • 2 tsp vanilla extract
  • 1 cup semisweet mini chocolate chips (about 6 ounces, or 6 low-FODMAP servings)
    • can also use 1 cup chopped toasted pecans or walnuts or combination of nuts and chips

Directions

  • Preheat oven to 350 F
  • Line 2 baking sheets with parchment, or silicone baking sheet liners
    • hint- to stick the parchment to the baking sheet, use a dab of the cookie batter and it will hold beautifully!
  • In a large bowl, combine sugar, cocoa and salt
  • Add egg whites, vanilla and blend by hand, forming a thick sticky dough
    • Depending on how liquid-y your eggs are you may need one more egg white for this to come together well
  • Stir in chocolate chips
  • Drop dough in small rounded spoonfuls onto prepared sheets (can use a cookie scoop, or melon baller)
  • Leave 2 inches or more between cookies to allow spreading
  • Bake about 10 minutes, or until they appear set (mine took exactly 10 minutes)
    • they will have a shiny surface with cracking, this is normal
    • the middle may appear underdone
  • Cool on the baking sheet and then remove with a rubber spatula
  • Store in refrigerator or these freeze very well
  • They are exactly like a chewy fudge low-FODMAP brownie…

  • So hard to just eat one!

    This recipe is fantastic! I made them for my Granddaughter and now when she comes to visit every Saturday we make them. The first time I thought I’d never get them mixed, but with patience the ingredients do incorporate. I use XL eggs now. These cookies are addictive, so be prepared!
